Decadent Salted Peanut Butter Chocolate Squares

These are rich, decadent, and oh so tasty. Great for a treat, or to whip up when you have guests coming. Take them to a dinner party – they’ll go down a treat!

MAKE THE BASE:

1 cup of peanuts
1/2 cup of walnuts
1/2 cup of LSA or LSC
1/2 of desiccated coconut
2 tablespoons of natural peanut butter
1 tablespoon of melted coconut oil
2 tablespoons of rice malt syrup
Pinch of Himalayan Rock Salt

Chuck everything in a blender and mix until chunky and sticking together. Firmly press into a baking tray (mine is approx 20cm by 10cm – but use whatever you have on hand). Place in fridge.

MAKE THE CENTRE:

3 tablespoons of natural peanut butter
2 tablespoons of rice malt syrup
1 tablespoon of melted coconut oil
2 teaspoons of vanilla extract or essence

Mix together either by hand or in the blender. It won’t be runny, but it shouldn’t be super thick either. Spoon it onto your base and press across evenly. Place back in fridge.

TOP WITH CHOCOLATE:

You can either melt a block of your favourite dark chocolate (I use 95%), or you can make your own chocolate if you prefer. Pour the melted chocolate across the slice and spread evenly. Refrigerate for a few hours.

CUT THE SQUARES

After a few hours, sprinkle with Himalayan Rock Salt and cut into squares using a hot, sharp knife. This usually prevents the chocolate from cracking – it will be solid, but it won’t have properly set yet. Place in a container and back in the fridge, ready for consumption!
