Broccoli, Kale, Coriander and Feta Salad
This salad is easy to make, delicious, and it can be had as a whole meal, or as a side salad. It’s also chocka block with fabulous nutrients for your body.
YOU WILL NEED:
1 cup of kale leaves (or 2-3 stems – pull the leaves off)
1/3 cup of broccoli
1/2 cup of spinach leaves (OPTIONAL)
4-5 coriander shoots
1 tablespoon of chopped feta (I use goat or sheep, but use any favoured brand)
1 teaspoon of sunflower seeds
1 teaspoon of sesame seeds
Fry the broccoli on a medium to high heat (I don’t use oil) with a pinch of salt for approximately 3-4 min. I add a few drops of water to the pan while hot to invite some steam.
Add in the kale and sunflower seeds with a splash of oil (I use olive, but use an oil of of your choice). Keep mixing this for the next two minutes, or until the kale and broccoli is nice bright colour, cooked but still fresh and slightly chewy. No one likes overdone veges!
If this is your main meal and not a side salad (or if you want a really big side salad…), mix in the spinach leaves as you take it off the heat.
Place on plate and top with feta, coriander shoots, and sesame seeds. Add a squirt of lemon if you like. Yum!
