Chocolate Peanut Energy Balls

Who doesn’t love a little chocolately bliss to nibble on? In the past I’ve made these balls using all sorts of ingredients in many different ways, but I’ve finally settled on using nuts as a base instead of coconut, and peanut butter to moisten instead of coconut oil.

Due to my intolerances, I can only have a limited amount of a small selection of nuts – I’ve worked out how to do so while making these little bites of energy perfect for a wee snack!

Plus – you just chuck everything in a blender and go. Too easy.


Put the following into a blender and whizz until the mixture goes reasonably smooth then starts to clump again.

1 cup of peanuts
1 cup of walnuts
1/4 cup of linseed or ground flaxseed
1/2 cup of sunflower seeds
1/2 cup of desiccated coconut
1 teaspoon of salt (I use Himalayan rock salt)


1 teaspoon of vanilla extract
2 tablespoons of cocoa or cacao
2 tablespoons of peanut butter (generously heaped – I use a natural, crunchy peanut butter)
2 tablespoons of rice malt syrup
OPTIONAL: 1 tablespoon of coconut oil will make these more ‘fudgy’ and moist; the balls stick together without it, so use at your own discretion.

Blend again until the mixture starts clumping together. Squeeze into balls, and refrigerate! Makes approx. 12-16 depending on size.
